  • 1/2 cup ragi flour
  • 1/2 cup wheat flour
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 /4 cup jaggery powder (adjust according to your sweetness preference)
  • 3/4 cup milk(Dairy or plant based)
  • 1/4 cup olive oil
  • 1 teaspoon vanilla essence

Chocolate Ganache(optional)

  • 100 grams of dark chocolate
  • 2 to 3 tablespoons of warm milk
  • 1-inch piece of butter (for glazing)
  • Sliced almonds (optional, for garnish)

Method of preparation with photos

1.Preheat the Oven

Preheat your oven to 180°C (350°F) or according to your oven instructions. Prepare the cake tin by either greasing it lightly and dusting with a touch of ragi flour (this step is optional and adds a nice texture), or alternatively, line the bottom with parchment paper or a baking sheet and grease with oil. As this helps in easy removal from the cake tin.

2.Mix the Dry Ingredients

In a large bowl ,place a sieve and combine the ragi flour, whole wheat flour, baking powder, baking soda, and a dash of salt. Thoroughly blend the ingredients and set aside.

3.Prepare the Wet Ingredients

In another bowl, whisk together the melted jaggery or jaggery powder, olive oil and milk until well combined.

4.Combine the Wet and Dry Mixtures

Slowly add the wet ingredients to the dry ingredients, stirring gently until everything is well incorporated. Be careful not to overmix.

5.Bake the Cake

Pour the cake batter into the prepared cake tin. Tap it gently to remove any air bubbles. Optionally, sprinkle chopped nuts on top for added crunch.

5.Bake in the Oven

Place the cake tin in the preheated oven and bake at 325°F (160°C) or depends upon the oven setup for 30-35 minutes or until a toothpick inserted into the center comes out clean.

6.Cool and Serve

Allow the cake to cool in the tin for a few minutes before transferring it to a wire rack to cool completely.

7.Garnishing(optional)

  1. Begin by melting 100 grams of dark chocolate using a double boiler method.
  2. Once the chocolate has melted, add 2 to 3 tablespoons of warm milk and a 1-inch piece of butter for glazing.
  3. Stir until the mixture reaches a consistency that is neither too thick nor too thin. This is the desired consistency.
  4. Pour the ganache over the cake or spread it between layers and on top.
  5. Optionally, garnish with sliced almonds for an added touch.
