Banana

Ingredients

- Raw bananas (plantains) – 2 medium-sized

- Coriander powder – 1½ tsp
- Red chili powder – 1 tsp (adjust to taste)
- Asafoetida (hing) – ¼ tsp
- Turmeric powder – ¼ tsp
- Shallot – 1 small (roughly chopped)
- Ginger – 1 inch piece (peeled and roughly chopped)
For Tempering:
- Coconut oil – 1 tsp
- Mustard seeds – ½ tsp
- Shallot – 1 small (finely chopped)
- Dry red chili – 1-2, broken into halves
- Curry leaves – 6-8 leaves

- Peel and cube the raw bananas, drain, then put them to the pan with water. Cover and cook until soft.





2.Make the Coconut Paste : Blend grated coconut, coriander powder, and red chili powder. Add asafoetida, turmeric, one shallot, and ginger. Mix with a few tablespoons of water until smooth.





3.Combine the coconut mixture with the bananas. Mix coconut paste into the cooked bananas. Avoid boiling to preserve the fresh coconut flavour.




4.Prepare the tempering In a small pan, heat 1 teaspoon of coconut oil over medium heat. Add mustard seeds and let them splutter. Sauté finely chopped shallots until golden, then add dry red chili and curry leaves for a few seconds until fragrant.






5.Finish the curry Pour the tempered mixture over the banana and coconut blend. Cover and let the flavors infuse for a few minutes before serving.





6.Serve: Enjoy your raw banana curry warm with rice or roti.
