INGREDIENTS

  • 250 grams of mushroom-You can use any variety of mushroom
  • 1 onion sliced
  • 2 chopped tomatoes
  • 1 tsp mustard seeds
  • 1/2 inch ginger
  • 1 tsp Chilli powder- You can increase as per your spice level
  • 2 teaspoon of coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 teaspoon of black pepper powder
  • 1/2 tsp garam masala
  • Salt to taste
  • 1/4 cup soaked cashew- You can use soaked almonds instead
  • 2-3 tablespoon of oil of your choice
Preparation time-15 minutes Cooking time-30minutes

Step1:Heat oil in a pan and add sliced mushrooms. Sauté for a few minutes, then cover and cook briefly. Sauté again, add 1/2 teaspoon of salt and 1 teaspoon of black pepper powder. Cover and cook until the mushrooms release water and become soft. Avoid overcooking

Step 2:Heat 1 tsp of oil in a pan and add 1 sliced onion. Sauté until translucent. Add 2 chopped tomatoes and 1/2 inch sliced ginger, then sauté well. Add 1 tsp chili powder, 2 tsp coriander powder, 1/2 tsp turmeric powder, 1/2 tsp black pepper powder, and 1/2 tsp garam masala. Sauté until the raw smell disappears.

Step 3: Once the mixture is cool transfer into a blender, add soaked cashews, 2 tablespoon of water and blend well.

Step 4:In the same pan, heat 1 tsp of oil and add mustard seeds. Let them splutter, then add the blended mixture and 1 cup of water. Mix well, adjusting the water for your desired consistency. Add 1 teaspoon of salt and the cooked mushrooms. Mix well, cover, and simmer for 5 minutes. Your spicy mushroom curry is ready.

Step 5: Garnish with fresh coriander leaves(Optional) and serve hot with rice or roti.
