Welcome back to another blog post! This one is extra special to me because I’m sharing a jackfruit recipe that brings back fond memories from my childhood. I come from the southernmost part of Kerala, a place known for its beautiful scenery. In our area, jackfruit trees were everywhere, and jackfruit was a seasonal treat from March to June.

We used jackfruit in almost every meal, trying it in various forms, from its tender, young stage to its fully ripe state. There are many types of jackfruit, each with a unique flavor and texture. Normally, we use fresh raw jackfruit, but to enjoy it year-round, we dry it in the sun and preserve it without any preservatives, allowing it to last for years. In this post, I’m sharing a tasty and delicious dish made with dried jackfruit. Let’s dive into the blog!

JACK FRUIT

Jackfruit, scientifically known as Artocarpus heterophyllus, is a tropical tree fruit native to the rainforests of the Western Ghats of India. It is the largest tree-borne fruit, with a spiky outer skin and sweet, yellow flesh inside. Jackfruit is known for its versatile nature, with both its unripe and ripe stages being used in various culinary dishes. It has a distinct, sweet aroma and a flavor often compared to a combination of pineapple, mango, and banana. The seeds and flesh of the fruit are used in cooking, and it is a popular ingredient in many Southeast Asian and Indian recipes. Due to its fibrous texture, it is often used as a meat substitute in vegetarian and vegan dishes.

INGREDIENTS

  • 4 cups dried raw jackfruit
  • 4-5cups of water
  • 1-2 tsp salt- Add as required
  • 1 tsp cumin seeds
  • 1/2 tsp ground
  • 1-2 cups of Coconut (can add as per taste)
  • 3-4 chillies( add as per spice level)

RECIPE

1.Preparation of jackfruit.

Rinse the dried jackfruit thoroughly to remove any dirt or debris. In a large bowl, soak the jackfruit in 4-5 cups of water for at least 2-3 hours to rehydrate it. After soaking, drain the water from the jackfruit and wash again 1-2 times. Transfer it to a cooking pot.

2.Cooking

If excess water you can drain off the excess water.

3. Coconut mixture.

While jack fruit is cooking we will make a coconut mixture. Add coconut, cumin seeds, turmeric powder and pulse in a blender for 3-5 seconds. Do not over grind.

4.Final step

Once jackfruit is cooked, add the coconut mixture into the pot, add curryleaves, 1 tablespoon of coconut oil, mix well and simmer for 5-10 minutes.

5. Serve the jackfruit with steamed rice and fish curry.

STORAGE

  1. Fridge-Once prepared, the dried jackfruit curry can be stored in an airtight container in the refrigerator for up to 3-4 days.
  2. Freezer-To extend its shelf life, you can also freeze the curry in freezer-safe containers for up to 2-3 months. When ready to consume, simply defrost the curry in the refrigerator overnight and reheat it over low heat on the stove or in the microwave.
