INGREDIENTS

- 1 cup foxtail millet
- 2 cup water
- 1 tablespoon oil
- 1 teaspoon cumin seeds
- 1 teaspoon mustard seeds
- 1 chopped onion
- 1 carrot diced
- 1-2 green chillies
- 1/2 cup green peas
- 1/2 cup corn
- 1/2 teaspoon ground turmeric
- 1 teaspoon ground pepper
- Salt
- Handful of chopped coriander leaves
RECIPE
- To prepare foxtail millet, start by rinsing the millet under running water and soaking it for 4 to 8 hours.
- After soaking, in a pot, add 2 cups of water and the soaked millet, and cook until soft.
- In another pan, heat 1 tablespoon of oil and add 1/2 teaspoon of cumin seeds and 1/2 teaspoon of mustard seeds, allowing them to splutter.
- Next, saute chopped onions until soft, then add chopped carrots, green peas, corn, and green chilies, mixing well.
- Season with ground turmeric, ground black pepper, and salt, covering and cooking until the vegetables are tender.
- Once cooked, add the prepared millet to the vegetable mixture, stirring until well combined.
- Adjust salt if needed, then add a handful of chopped coriander leaves and mix.
- Serve warm and enjoy your nutritious foxtail millet dish!
METHOD OF PREPARATION WITH PICTURES
1.Rinse the foxtail millet under running water and soak for 4 to 8 hours.

2.After soaking for 8 hours add 2 cup of water and millets and cook well until soft.

3.While the millets are cooking take another pan and add 1 tablespoon oil.

4.Add 1/2 teaspoon cumin seeds, 1/2 teaspoon mustard seeds and let it splutter.

5.Add chopped onion and saute until soft.

6.Add chopped carrots, green peas, corn, green chillies and mix well.

7. Add ground turmeric, ground black pepper, salt, mix well and cover and cook until the vegetables are cooked well.

8.Then add cooked millet into this vegetable mix and mix well until well combined.

9. If you want to add more salt you can add at this stage. Add handful of chopped coriander leaves and mix well.
