Recently, I picked up some carrots with their leaves. I didn’t realize that carrot leaves were edible until I looked it up. I decided to try a South Indian recipe with them, and it turned out surprisingly delicious! CARROT LEAVES
Carrot leaves, often overlooked, offer a delightful surprise to culinary enthusiasts. These vibrant greens, usually trimmed and discarded, are in fact edible and bring a unique flavor and texture to dishes. INGREDIENTS

- Carrot leaves -I took 3 bunches.
- 1 -2 medium carrot
- 1 medium onion
- 1/2 cup grated coconut
- 2 green chillies
- 1 tablespoon of oil of your choice
- 1 teaspoon mustard
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder
- Salt to taste

RECIPE
- Heat a pan and add 1 tablespoon of oil. I prefer using coconut oil, but you can use any oil you like.
- Once the oil is hot, add mustard seeds and let them splutter.
- Add chopped onion to the pan and sauté for a few minutes until they turn translucent.
- Now, add the chopped carrots to the pan and sauté them well. Cover and cook until carrots are soft.
- Once the carrots are sautéed, add salt, turmeric powder, the chopped carrot leaves to the pan. Make sure to remove the hard stems as they take longer to cook.
- ix everything well. Then cover the pan and let it cook for a few minutes.
- Remember to stir occasionally to ensure even cooking.
- Continue cooking until the carrots and leaves are soft and tender.
- In a blender, combine grated coconut, cumin seeds, and green chili. Pulse the mixture until it’s finely crushed, but not turned into a paste.
- Once the carrots and leaves are cooked, add the coconut mixture to the pan along with salt to taste.
- Cover the pan again and let it cook for another 5 minutes.
- Your carrot leaf recipe is now ready to be served!
METHOD OF PREPARATION WITH PICTURES

8.Remember to stir occasionally to ensure even cooking.Continue cooking until the carrots and leaves are soft and tender.
9.In a blender, combine grated coconut, cumin seeds, and green chili.

11.Once the carrots and leaves are cooked, add the coconut mixture to the pan along with salt to taste.

12.Cover the pan again and let it cook for another 5 minutes.Your carrot leaf recipe is now ready to be served!
