KERALA CUCUMBER

Kerala cucumber, also known as “Malabar cucumber” or “Magge” in Malayalam, is a type of cucumber native to the Indian state of Kerala. It’s a smaller variety compared to regular cucumbers, with a thicker skin and crisp, juicy flesh.   • 1/2 Kerala Cucumber
  • 2-3 green chilies(as per taste)
  • 1 teaspoon finely chopped ginger
  • 1 medium onion chopped
  • 1/2 grated or diced coconut
  • 1 teaspoon mustard seeds
  • 1 tablespoon coconut oil/any oil of your choice
  • 1-2 dry chilies
  • Curry leaves

Recipe

  1. In a pan, combine the chopped Kerala cucumber, sliced green chillies, and 1/4 cup of water. Cover and cook over medium heat for about 15 minutes or until the cucumber becomes soft.
  2. While the cucumber is cooking, prepare the coconut paste. In a blender or food processor, blend the diced or grated coconut with 1/4 cup water until it forms a fine paste. Adjust the consistency by adding more water if needed.
  3. In a separate pan, heat coconut oil over medium heat. Add mustard seeds, dry red chilies, and curry leaves. Allow them to splutter. Add finely chopped ginger and saute well.
  4. Add chopped onions to the pan and sauté until they become translucent.
  5. Once the cucumber is cooked, add it to the pan along with the prepared coconut paste. Mix everything well.
  6. Cook for another 1-2 minutes to allow the flavors to blend together, being careful not to boil as it may affect the coconut’s nutritional value.
  7. Serve the Kerala cucumber curry hot as a side dish with steamed rice or as part of a traditional Kerala meal.
