Recipe
For the cake
- Preheat your oven to 350°F (175°C).Prepare a greased pan by lining it with parchment paper or if you don’t have a paper dust the pan with some flour. I used a 7 inch baking tin
- Take a large bowl, pour in lukewarm water, and add the jaggery. Stir thoroughly until the jaggery completely dissolves.
- Next, include the oil (or melted butter/ghee), jaggery, and vanilla essence. Mix everything well until thoroughly combined.
- Set a sieve over a bowl and combine the whole wheat flour, cocoa powder, baking powder, baking soda, and salt. Sift the ingredients together. Mix until well combined and smooth. I used Cacao Powder in this recipe, but you can also include cocoa powder.
- Pour the batter into the prepared cake pan.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool completely before frosting.
For the frosting
- Scoop out the flesh of the ripe avocados and place them in a food processor or blender.
- Add cocoa powder, maple syrup (or honey/jaggery), oil, vanilla essence, and a pinch of salt.
- Blend everything until smooth and creamy. Taste and adjust sweetness if needed.
- Spread the avocado frosting generously over the cooled Chocolate Bliss Cake.
- Place the cake in the fridge for 30 minutes
- For an extra touch, melt the dark chocolate with milk and pour it it over the frosting.
- Garnish with some grated chocolates, cherries and desiccated coconut and enjoy….
If your frosting seems too firm, add 1 to 2 tablespoons of milk gradually until you achieve the desired consistency.
