Plum Cake

Kerala Plum Cake, a revered Christmas dessert in the Indian state of Kerala, carries profound cultural importance, particularly during the festive season, and is embraced by people across communities. Its luxurious, dense texture and the medley of dried fruits and nuts make it distinctive. Deeply ingrained in the Christian community’s Christmas traditions, it symbolizes joy, celebration, and unity.

The festive air in Kerala is incomplete without the sweet aroma of Plum Cakes filling homes, as families unite to bake and share this special treat, marking the joyous occasion. It is known for its unique flavor profile, the cake’s blend of spices, dried fruits, and nuts, often infused with wine or brandy, sets it apart from regular cakes.

Beyond its taste, the cake holds cultural significance in the spirit of sharing and gifting during Christmas, where families exchange homemade Plum Cakes as tokens of goodwill, love, and festive cheer. In tune with a growing awareness of health-conscious choices, many in Kerala are embracing healthier versions of the Plum Cake, incorporating whole wheat flour and natural sweeteners like jaggery, making this cultural delight accessible to a wider audience.

Ingredients

  • 1 cup whole wheat flour
  • 3/4 cup mixed dry fruits(chopped dates, figs, sultanas, dried apple, dried mango or any dry fruits of your choice)
  • 1/4 cup chopped nuts (almonds, cashews, walnut or any other nuts of your choice)
  • 1/2 cup jaggery powder
  • 1/2 cup milk(Any milk of your choice)
  • 1/4 cup oil(vegetable oil)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon powder
  • 1/4teaspoon nutmeg powder
  • A pinch of salt
Preparation Time:10minutes Baking time:40-45minutes
Total Time:1 hour

Method of preparation

1.Combine oil, milk, and jaggery, mixing until the jaggery melts.

2.Add wheat flour, baking powder, baking soda, cinnamon powder, nutmeg powder, and salt.

3.Combine the dry ingredient mixture with the wet ingredients. I opted not to sieve the mixture since I prefer a denser texture, and there were no lumps present in my dry mixture. If you prefer a softer texture, you may choose to sieve the dry ingredients.

4.Incorporate mixed dry fruits, chopped nuts, and vanilla essence using the cut and fold method, ensuring a well-blended batter.

5.Pour the batter into a greased 6-inch tin, smooth the top, and gently tap to eliminate air bubbles. Bake in a preheated oven at 180°C (350°F) for 40-45 minutes or until a toothpick comes out clean.

6.Once cooled slice and enjoy……..
